Proof & Crumb sizing guide

Banneton size calculator

Start with total dough weight and the loaf shape you plan to bake. The ranges below are a practical shortlist—not a guarantee of fit—because dough strength, hydration, proofing level and basket geometry all change how much space a loaf needs.

1. Choose the loaf shape

Round / boule

Choose a round basket for a round loaf, especially when you bake in a round Dutch oven.

Oval / batard

Choose an oval basket for an elongated loaf or when your baking vessel is longer than it is wide.

2. Look up total dough weight

ShapeTotal dough weightCommon starting rangeWhat to verify
RoundUp to about 750 gAbout 8–8.5 inConfirm the loaf will not spread beyond your baking vessel.
RoundAbout 750–1,000 gAbout 8.5–10 inUse the seller’s stated capacity when available; basket depth matters.
RoundOver 1,000 gLarger basket or divide the doughDo not assume diameter alone equals capacity.
OvalAbout 600–900 gAbout 10–11 in longCheck internal length and your baking surface.
OvalOver about 900 gAbout 14 in or a verified larger capacityConfirm the loaf and basket both fit your oven setup.

3. Check before you buy

  • Use total dough weight, not flour weight.
  • Match the basket shape to the loaf and baking vessel.
  • Look for an explicit internal size or dough-capacity statement on the exact product.
  • If the listing does not state capacity, email support@proofandcrumb.com before ordering.
